Crazy October

It's only 12 days into October, but my oh my has it been a whirlwind crazy month already!  So let me tell you a little about it...

The craziness started the very first day of October....when I had four weddings!  Who's the crazy baker with a new baby who decided to take on four weddings??  This lady right here!  I rationalize this by telling people they were all smaller weddings (250 and under) and only one had to be set up by me.  This last bit is always an advantage, but also means I usually miss out on getting setup photos, which is always a bummer!

Even with a new baby, this four wedding weekend probably wouldn't have been too crazy for me...but I also had a 720 cupcake order (all decorated) three days later, moved the day after and closed on the selling of our house two days after that!! So if it has taken me longer to respond to customers you now know why.  

​Trust me I didn't plan for last week to be so insane, it just kind of happened.  I've had the big 720 cupcake order booked for a very long time...then we sold our house and the closing date just so happened to fall during that week.  So we made it work!  

The 720 cupcake order was a big deal for me.  It was for Hoard's Dairyman and was delivered to the World Dairy Expo in Madison.  Now that's a herd of cows!

My life the first week of October was bake, bake, bake...pack, pack, pack....snuggle, snuggle, snuggle baby.  Which brings me to baby Wyatt.  I am soooo lucky to be able to go through all this bakery craziness with him by my side.  My mom semi-retired when I had him...so even though I had long days the bakery, he was right there with me!  My mom is kind enough to come along on my long days and take care of him while I fill orders so that I don't have to go hours on end without seeing him.  To make things even easier, we are currently living in my parents basement (we sold our current house, and the our new one isn't ready to be moved into yet!).  This made moving a bit harder and makes contacting customers a bit complicated (no cell service), but makes packing up and going to the bakery with grandma in tow a bit easier.  Thanks mom!!

Things have slowed down a bit this week, but not by much!  Thanks to everyone for their patience with me in my delayed responses and thanks for all the continued orders! Wyatt was pretty wiped out by the crazy beginning to the month too....  :)

End of Summer Weddings

I don't know about you, but fall is my favorite season!  Sweaters, boots, sweatshirts, fall flavors, and an excuse to drink warm beverages (like coffee!) all day long...sign me up!  Fall is also when I have the most weddings.  It is definitely the new summer as far as weddings go.  But that doesn't mean there aren't plenty of summer weddings!  Here's a peak at the end of summer Steph's Sweet Treats weddings.

August 27- 200 cupcakes at the fairgrounds in Lancaster- french toast, Choco-mallow, raspberry cheesecake, and butterscotch.  I had never been to this venue before and was shocked at how perfect it was!  It's the newest building at the fairgrounds and is the perfect space for a wedding.  This setup used my crates and I added their sunflower and tulle decor as I went.  They also got a larger rosette style cutting cake to match their wedding colors.

September 3- 150 cupcakes at Folklore Village- crazy pig, strawberry shortcake and mint brownie. This was another first time venue for me and I was again amazed by how perfect the space was.  The setup was provided by the couple and I loved being able to use multiple heights and platters...plus they had such fun flavors!

September 10- 150 cupcakes Wisconsin Riverside Resort vanilla raspberry and chocolate peanut butter with a vanilla two tiered cake.  This was a fun wedding in so many ways!  I loved the display (provided by the couple) and I loved making a cake I had never made before!  It is definitely nerve wracking when someone asks for something new, but so fun at the same time.  I loved the end result of this two tier cascading rose cake!

September 17-  This was a double wedding weekend!  The first wedding, delivered and set up by me was: 350 cupcakes at Wisconsin Riverside Resort - s'more , strawberry cheesecake, chocolate peanut butter craving, and cookies n cream.  So many fun flavors, display rented from me (one of my favorite ways to set up) and the room was set up beautifully!

The second wedding of the night was delivered and set up by my husband.  It was 250 cupcakes at The Barn At Harvest Moon Pond - cookies n cream , vanilla raspberry, chocolate peanut butter, red velvet and apple pie cupcakes.  The fun rustic setup was provided by the couple.  I must say I'm very jealous that he got to see this amazing Poynette venue!  I have never been there before and from the pictures he brought back, it looks beautiful!  Thankfully, I have another wedding here next year so I'll still get to see it!

First Wedding(s) Post Baby

I know a lot of people thought I was crazy...heck I even thought I was a bit crazy...to have weddings booked so close to my due date (2 weeks after).  Why did I allow this?  Well because I had to cancel and turn away enough weddings around my due date... I wanted to at least keep the weddings at the end of the month and just do whatever I had to do to make them happen.

I added to the craziness by agreeing to take on an additional wedding the weekend of August 20th.  I already had one booked, but since they were both on the small side and both in the same area delivery wise, I said yes....I have a bit of a problem with saying no (but I'm getting better at it now that I have a baby!)

If baking for two weddings, and a limited amount of orders, less than two weeks after having a baby doesn't sound crazy enough...I also decided my husband and I could pull off a double delivery with a newborn in tow!

I have had a lot people curious as to whether or not I am baking and I think some of these people are concerned that I am not taking advantage of the precious time with my newborn.  So I want to clarify that yes I am baking, and yes I certainly am taking advantage of EVERY moment.  I have the advantage of owning my own business...which means I'm on my own time and can take Wyatt with me when necessary or my husband can bring him so I don't have to go without seeing him (which he's amazing for doing for me!).  I'm adjusting my schedule to Wyatt; which means baking later in the day (reserving those 3 a.m. wake-ups for him rather than baking.  Between taking him with me when he was sleeping and my husband bringing him, I only had to go a 4 hour stretch of baking without seeing him last week.  And trust me...it was super hard and I probably didn't put him down for the rest of the night!  

Now onto the double delivery.  I would have had my parents babysit Wyatt...but they had a wedding of their own to attend...and well I just couldn't bear to go without him just yet!  We had to deliver to Richland Center and Spring Green and were on a tight timeline.  While we left promptly at the time I planned on leaving....Wyatt's schedule got a bit thrown off around lunch time (had to let him sleep when we planned on having him awake)..which meant I knew at some point we'd have a hungry baby on our hands right in the middle of delivering.  

So while it was a little more hectic than usual (yes he woke up and wanted food just like I predicted), we made it work!  While I set up the cupcakes my husband tended to Wyatt (again, did I mention how amazing he is?!).  And we still managed to get in and out of the venues with time to spare!  I know we can't take Wyatt on every delivery, but I think I may have just wanted to prove to myself that we could do it.  And we did!

New Line of Specialty Pre-designed Cakes

As you probably know, I'm constantly trying to come up with new goodies to offer you guys.  This new line of specialty cakes is something I've toyed with for quite awhile, I just never got around to actually doing it.  So what are they?

Just like with cupcakes, cakes can be ordered in three different levels: standard, deluxe, and specialty.  Well these specialty pre-designed cakes are another step up! A regular specialty cake involves a specialty cake flavor (for example: banana), or can be specialty because it has filling added and a flavored frosting added to a standard level cake flavor (for example: vanilla cake with raspberry filling and whipped frosting).  

These specialty pre-designed cakes are based off of some of the specialty cupcake flavors and have all kinds of extra goodies in and on them to jazz them up and make them extra special.  Since they are pre-designed, they cannot be decorated beyond the pre-design...although, I may be able to add a small message to the top if needed.

I think these cakes are great for so many situations.  Adults don't necessarily have themes for their birthdays, so a pre-design is perfect; work events; family gatherings; treat for a friend or loved one; gift; and sometimes you just want a cake for no reason at all...these are perfect for those times!  They can be ordered in a 6" round or an 8" round.

I may still add a few flavors to the list, but here are some of them that I have come up with so far.  Below are the five I tested and photographed, along with a description of what they are made up of (so you can see the added complexity of them!)  They aren't your ordinary cake folks!

Story Behind the Order-Round 4

It's been several months since I've done one of these blog posts, so I thought it's about time I do one!  The growth of Steph's Sweet Treats has led to the opportunity to do even more fun and unique orders.  Here's a behind the scenes look at a few recent orders!

I'm known for my cutout sugar cookies (if you haven't tried them, please do!).  But when I opened Steph's Sweet Treats I wasn't going to do the whole decorating of cookies things.  Not sure why, but my cutout cookies have just always been simple....great cookies, great frosting, and that's it.  Nothing fancy; just plain yummy.

However, as the business grew, so did the demand for decorated cookies...so I gave in!  I am not a fan of royal icing; I find that it lacks flavor and is just too hard.  So I came up with an icing alternative for decorated cookies.  It still hardens to the touch like royal icing, but it is not as hard and still has flavor.  Opening the door to decorated cookies has led to some very fun orders, including the one from above!  These cookies were not only extra special because I loved the colors and designs (there was also some with the wedding date on them), but because they were ordered by my best friend for a high school friend/fellow cheerleader.  

Not all of the decorated cookies are iced.  I have done some with the traditional frosting as well.  These don't allow for as much detail and run the risk of smearing/the design getting squished (although I do use layers of wax paper between the cookies to help avoid this).  All of which I let people know when they are deciding between icing and frosting.  I had the pleasure of doing almost 200 cookies for Dean Clinic of Dodgeville for Health Care week.  This happens to be where my doctor is, so it was pretty cool when my doctor told me how they enjoyed my cookies!

 These next two cakes were for the same family and same weekend.  They got to have a double celebration of a birthday and gender reveal!  And did I mention two super fun cakes!?  

They both presented new challenges to me, which I loved.  The customer sent me photos to base the cakes off of and then I had to make them come alive.  The horse silhouettes were the aspect I thought would be the most challenging, but it wasn't!  I was soooo pleased and happy when I tried and was successfully able to paint on buttercream!  I have painted on fondant before, but never buttercream.  It worked and I was so pleased with the end result.  This cake also needed flowers.  Don't get me wrong, I love making fondant flowers, but they can be very timely to make, resulting in more expensive for customers.  So I have a stock of a few different kinds of flowers on hand and they worked perfect to make this cake extra special.

Now I always love a gender reveal cake...so of course I was excited about this one!  I had fun making the fondant aspects of this cake; although I'll admit the boots were probably one of the most difficult things I have had to sculpt.  They may not look difficult, but they were!  

Fun fact:  I have now been able to bake for all three of Cheyenne's birthdays since opening Steph's Sweet Treats! Here are year one and two:

Last but not least, I'll give a little information about a tiered cake from last weekend.  I don't get to do a ton of tiered cakes, but they have definitely picked up this year...in fact I had three different tiered cake orders last weekend!!).  This one was a for a surprise 30th party and hunting lover. I gave the customer some design options and we decided on a different look for each tier.  To make things easier, I delivered and set up the cake at the venue before the big surprise.  (If I don't set up, tiered cakes come in VERY large boxes and are very heavy when fully assembled....so people don't always have the space or capability to haul them around).

When I got the venue the customers kids were super excited to watch me set up the cake and it was great to see their reactions in person. I hope the birthday boy was excited and surprised by his party and cake!

My Favorite Cake

Don't get me wrong, I love all my orders and get excited to fill everyone's orders...but there are times when I get extra excited to fill an order.  This usually means I get to do something new, over-the-top, or something I've had my eye on.  In this case...the cake was all of the above!

The cake that was floating around Pinterest, Facebook, social media, etc. was a wood slab cake with a plaid inside and an ax coming out of the top.  Naturally, I wanted to make it!  Unfortunately, there are some technical things that needed to be done and known...and the only way to get them...pay a subscription to the site...

Then, a bride emailed me wanting the cake for her cutting cake!  (Minus the ax).  I was immediately excited and gave her a few options.  To do my own version of the cake, which would be close but could have some differences to the pattern inside and maybe the outside since I didn't have the exact methods that were used; or to add the website fee to the cake so I can get the inside scoop and apply it to the cake.  She opted for the website fee and getting the inside scoop...and here's what the end result was!

Sorry to plaster you with what may look like the same photo over and over...but I felt like I couldn't take enough pictures of the cake and just kept taking them (for your sake, I didn't put them all up!).  I did veer a little from the information I obtained from the site for the top of the cake, which was supposed to be done with an airbrush.

I just hand painted it instead....because while I have an airbrush...I've only used it once.  Not because I don't want to use it...but because I somehow managed to make it not work properly after only one use!  Oops!  And I have yet to figure out how to get it going again.  In the end, I was happy that my airbrush was broken because I LOVED the outcome of the hand-painting.  I liked it more than the airbrushed version.

To make this cake even more exciting...it was plaid on the inside!  It's a little hard to see, but the couple was kind enough to have pictures sent my way so I could see the inside.  I couldn't exactly cut the cake, take a picture and put it back together now could I?!

As you can probably tell my my over enthusiastic photo taking, and blabbing, I love this cake!  It's always stressful when something you've never done comes your way, but at the same time...sooo exciting!  So I hope you enjoy this cake as much as I do!

Easter, Graduation, and Weddings...oh my!

 Even though there really isn't a time of the year where there aren't any orders (knock on wood), there is definitely a busy season in baking....and it's about to hit!  I know it's hard to plan ahead, but if you have big events and parties from April-October PLEASE contact me as soon as you can to schedule things.  For example, I can only book so many graduation parties per weekend, so if you have a graduation party to plan, contact me now before it's too late.

Easter is only a little over three weeks away.  Since I have a wedding that weekend, I will have to limit the number of other orders I take.  If you would like to order for Easter, here are some ideas:
- Cake decorated for Easter
-Cupcake cakes (bunny, cross, spring flowers, etc)
-Cutout cookies (or decorated cutout cookies)
-Carrot cake cheesecake...yes this exists!!

Graduation season may seem like it is a long ways away...but it's not!  It's almost here!  If you are planning a party or know someone planning a party, please contact me as soon as you can or let the person know to contact me soon.  Even if you don't have exact numbers yet, holding your spot is key since I can only take so many a weekend....especially when parties overlap with weddings.

When most people think of graduation parties, they think cake, but you don't have to do cake!  You can do cake, cupcakes, cookies, or any combination of the above.   I can incorporate school colors (college or high school), career choice, hobbies, interests, and/or sports. Depending on the size of the party, I'd say people usually go with all cupcakes or a cake plus cupcakes.  If the party is smaller or just for family it's common to just do a small cake. Here are a few cakes to give you some ideas.

Weddings are all year round, but definitely pick up from June-October.  Even if it's not exactly wedding season right this minute, I have been doing a lot of wedding tastings and do have at least a couple weddings a month starting this month.  When I have weddings, it makes it even more important for people to give me notice for their orders.  I hate turning people away, but the likelihood of that happening goes up drastically if you contact me with less than a weeks notice during wedding season....especially this year since I will be farther along in my pregnancy and taking less orders.  

If you still have a 2016 wedding that you haven't booked yet, I have very limited availability, so contact me as soon as you can.  If you aren't getting married until 2017, it's not too soon to book!  The sooner the better...dates go quickly.  Don't forget to refer someone to Steph's Sweet Treats. If you know someone getting married, you refer them, and they book...you get a gift certificate!

Behind the Order-Round 3

It's been awhile since I did a "story behind the order" post, so I thought I'd do the first one of 2016, third one overall.  If you've never read one of the behind the order blog posts before,  I just give you a peek behind the scenes/background on a few orders. How do I pick which orders to talk about?  They usually have special meaning to me, were particularly fun (even though all orders are fun!), were something new I got to try, or were a big hit on Facebook.

First up, let's talk about Barbie.  I'm sure most of you have seen a 3D Barbie cake at some point since they are pretty popular... despite their popularity, I had yet to have someone order one!  So I was pretty excited to make this cake.  If you haven't noticed, Barbie is tall!  Which means a Barbie dress cake is VERY large!  This cake was 4+ layers of cake....I say + because there was some carving and sculpting at the top to get the dress shape and cover enough of Barbie's torso.  Barbie's top included, the cake measured around a foot tall.  

This isn't the first big cake I've had the pleasure of making for this customer.  I got to make the super fun monster cake pictured below when they welcomed a new baby into the family.  They sure know how to order fun cakes!

Next up, a super fun first birthday cake....and again, something I've been wanting to make.  I love seeing cakes with little elephants holding balloons, so when I was asked to make one, I was excited!  There was also a lot of different fondant details in this cake which is always a fun treat for me.  The elephant and flower got made a few days in advance so they could harden up enough to go on the cake.  The other details (chevron and polka dots) were made right before decorating so they were pliable enough to go on.  The cake also went with the polka dot smash cake pictured.  It was a first birthday and golden birthday celebration that I was thrilled to be a part of.

The next order was given to my husband's aunt by my mother-in-law.  Every year she gets her flowers for her birthday...so this year she wanted to combine her love of chocolate cupcakes with flowers!  She told me to do whatever I wanted, so I took inspiration from a popular cupcake bouquet that went around Pinterest and was sent to me by several people.  I think this mini bouquet turned about pretty darn cute.

Lastly, is a cake near and dear to my heart.  I was so excited to tell my Grandpa and Grandma Carley that I was expecting and keeping it a secret for so long made me want to make it a special reveal for them.  So what better way than to use a cake and my grandma's birthday?!  They have been the best grandparents I could ever ask for....supportive, loving, and always there for me.  I can't wait for them to be just as meaningful to our little one!

Steph's Sweet Treats 2015 Year in Review

Can you believe it's almost 2016 already???  I sure can't!  As they say....time sure flies when you're having fun...or in my case...making cupcakes!  I wanted to take the time to review the year and to express how grateful I am for all my customers. The support from customers and the community continues to amaze me!  So let's take a look at the year!

Weddings
I was blown away by the number of weddings this year!  Steph's Sweet Treats (AKA me) baked for 33 weddings...which is a huge increase from last year's 13!  Out of those 33 weddings, three weekends were triple weddings and four were double.   Tripling up was a first for me!  On one of the triple weekends my husband and I were even able to deliver all three.  I did one while he did one and then we met up to deliver the third together.  It was perfect cupcake harmony.  It's rare that I am able to deliver two weddings...but three?!  It was all due to perfect reception timing and location for those weddings.

Another Steph's Sweet Treats first for weddings was a traveling wedding.  The wedding was in St.Louis and everything had to be taken down by friends and family...a three tier display cake, a cutting cake, and 180 cupcakes!  It was nerve-wracking, but so exciting to see photos of locals eating my cupcakes all the way in St.Louis!   

Even though I would love to continually increase the number of weddings I do a year....I'm not sure that it's possible!  I mean there are only 52 weeks in a year... Sure I can still take on a few double and triples, but it gets difficult to take any other orders on those weekends.  I may not book as many double and triples in 2016, but hopefully I will have more weddings throughout the year, rather than all clumped together.

Cupcakes and Cakes
I try to keep track of how many cupcakes and cakes I made throughout the year...and of course I have records of all the sales, but it would take me ages to go back through all my invoices.  So I just keep tally's of cakes in various sizes and count cupcakes by the amount of wrappers I go through (and subtract any of the rejects or extras that don't get sold).  Next year I will have to keep track of the number of cupcake cakes I make because they continue to grow in popularity.  

Cupcakes- Approximately 30,500.  Holy cupcakes!
Cakes- 164 (if I remembered to tally them all!)

Open Days
Another crazy amazing growth for Steph's Sweet Treats this year has been the monthly open day events.  Last year I usually made between 300 and 400 cupcakes for open days (not counting Valentine's Day) and would regularly have extras.  This year I'm up to between 700 and 900 cupcakes plus over a 100 cookies and various other goodies, and selling out on a regular basis. Holy moly you guys rock!! My husband now helps be run the open days by literally being my other hand.  The mornings can be crazy busy, since I tend to run out or at least don't have much of a variety left by afternoon.  So if you've come in during the chaos hours... thank you for your patience!  I can't tell you how amazing it is to see everyone...new faces and the returning faces.  It means more to me than I could ever express.

Fun Facts
My dad randomly asked me one day if I knew how much I went through in terms of ingredients.  This was back in July so I decided to pull all my receipts and start calculating.  I continued to keep track the best I could and this is what I came up with for a few ingredients:  (Give or take or a few)

Butter- 683 pounds
Sugar- 615 pounds
Powdered sugar- 1,071 pounds
Eggs- 948 dozen (or 11,376 eggs)
I don't have flour numbers because I use two different kinds and it was a big jumble to calculate!  


Let's not forget about this  blog!  I started the blog this year and I think it has been a great way to connect with the customers on a personal level, as well as give people a deeper look into Steph's Sweet Treats.

What I'm trying to say with all the numbers and stats is thank you!!!!!!!  Year two for Steph's Sweet Treats has been an amazing year for growth not only in sales, but in followers and community support.  I can't beat big box store prices, but what you're paying for with Steph's Sweet Treats is something that's made from scratch with a whole lot of love.  I pour my heart into these orders and I hope you can tell with every bite!  So please continue shopping small with me.  

Every visit to an open day, every time you mention Steph's Sweet Treats, every like and share on Facebook and Instagram is a chance for Steph's Sweet Treats to grow and a moment for someone new to find me.  So thanks... once again, and I look forward to baking for you in 2016!

Tis' the Season

I'd say holiday season is in full swing...at least over here at Steph's Sweet Treats it is!  There's cutout cookies galore and all kinds of decorated cupcakes.  So this week I'm just going to give you a few more ideas for holiday orders and top it off with a little silliness.

Also....don't forget your raffle tickets!  Steph's Sweet Treats is raffling off this KitchenAid mixer (and everything you see with it!).  Tickets are $5 and the winner will be announced December 31.  All proceeds about the cost of the prize will be donated to the Iowa County Humane Society, so PLEASE get your tickets and help them out.  Contact me to get your tickets.

Now onto a little bit of silliness.  If you know me personally...you know I'm a big dork.  Ever since I opened Steph's Sweet Treats I've been doing this thing where I turn songs into songs about baking.  Maybe it's too much time alone in the kitchen, maybe it's my inner nerd...I'll just pretend it's because I'm creative!  I think they are pretty creative and funny...but you might just think I'm weird.  My husband tried to persuade me not to post them (he thinks the two of us are probably the only ones that find them funny)...but I'm doing it anyways!  

At least it won't be completely embarrassing...my original idea was to make videos of my new tunes.  You're welcome for not going that route!  So here are some of baking lyrics!  (I had to look up these real lyrics because I'm bad at figuring out what singers are actually saying and I'm so use to my version)

Song- All About That Bass by Megan Trainor

  • This is the first song I turned into a baking song and now I just can't stop

  • Not the most creative, but hey it still works!

  • This would be confusing unless you know the story...so here's the story.  I have circulation issues, and the mass quantities of cupcakes I frost on a regular basis has made it so my left arm/hand (since I'm a lefty) fall asleep all..the...time...  Of course it's also really bad when trying to sleep on that side...none-the-less..."but I love it...but I love it"  I also sing this one with the words feet in place of hands.  Long hours standing makes for sore feet.  So depending on the day, the song will vary for me...but I sing one of them every time I hear the song!
